Freezing: With the excellent shelf life of our products, freezing should not be necessary and is not recommended. To do so may cause some loss of flavor and moisture, especially for the mousses. However, should the need arise, products in their original vacuum seal can be frozen for up to six months. Thawing should be done gradually under refrigeration. Handling: To avoid breaking the seal on the vacuum-sealed packaging, do not pick up the loaves of pâté by the edge of the package. When you do open a fresh loaf, remove the plastic film and cut a thin slice off one end to reveal the appetizing color and texture of the pâté. Rewrap with plastic wrap which should be replaced daily to maintain a fresh clean appearance. Merchandising: Most Marcel et Henri pâtés come in approximately 5.5-lb. loaves. They can also be cut into two half loaves or cases of 8-oz. vacuum-sealed slices. Retail packs are perfect for self-serve delis and cheese cases. Delicious at cool room temperature with a crusty baguette or plain crackers, cornichons, and a bottle of your favorite wine or champagne, serve as simply or as elegantly as suits the mood and the occasion.
